I love ginger things and agree with everyone that a lemony icing would be just right.

When a recipe calls for stem ginger in syrup, I use something called gingernuts in heavy syrup from an asian grocery store. I'm not sure if they are exactly the same thing but they taste good and are much cheaper (from memory about $3-4 a jar).Katenoreply@blogger.comtag:blogger.com,1999:blog-8568586156818852710.post-81809552064890974372011-02-02T08:41:08.841+13:002011-02-02T08:41:08.841+13:00I love the sound of that cake, not have an overly ...I love the sound of that cake, not have an overly sweet tooth it has the perfect balance with all the gingery zing. I was thinking that to make cake for the hordes I might use normal brown sugar to help minimise costs. I'll keep you posted on the icing!

Kaz, lemon buttercream is sounding pretty good right about now.

Mum,Rosahttps://www.blogger.com/profile/07645883799759203673noreply@blogger.comtag:blogger.com,1999:blog-8568586156818852710.post-90371928860394864592011-02-01T21:25:01.514+13:002011-02-01T21:25:01.514+13:00Here in Christchurch we enjoyed our piece of this ...Here in Christchurch we enjoyed our piece of this cake with our after dinner coffee. I found that using brown sugar rather than the muscavado sugar gave a better less 'treacley' flavour. I would think a cream cheese frosting would be too heavy for this cake and would instead go with a nice lemony buttercream maybe. It will be interesting to see which one you pick and how it works with the cake.Meganhttp://www.itsallaboutfamilyandfood.blogspot.comnoreply@blogger.comtag:blogger.com,1999:blog-8568586156818852710.post-58973759588931746312011-02-01T10:46:47.596+13:002011-02-01T10:46:47.596+13:00I haven't made a ginger cake since nearly a ye...I haven't made a ginger cake since nearly a year ago when I posted one of Delia's...You've reminded me, what an oversight - I adore ginger, especially in this weather we're having in Europe...Sasahttp://sasasunakku.comnoreply@blogger.com
